- 8 slices country-style bread (about 3/4-inch thick each)
- 1/4 kilogram assorted small tomatoes, halved
- 1 clove garlic, finely chopped and mashed to a paste
- 1 1/4 cups whole milk ricotta
- 1 cup coarsely chopped mixed herbs
- 6 tablespoons olive oil, divided
- 1 tablespoon red wine vinegar
- Kosher salt
- Freshly-ground black pepper
In a medium-sized bowl, mix together garlic paste, 2 tablespoons olive oil and red wine vinegar. Add tomatoes and season with salt and pepper. Stir to coat tomatoes with garlic mixture.
