1. Rice Stuffed Mushroom

Ingredients (12 servings):

i. Fresh Mushrooms 24 lg.
ii. Minced Onion 3 Tablespoon.
iii. Chili Sauce 1 Tablespoon.
iv. Lemon Juice 1 Tablespoon.
v. Salt 1 Teaspoon.
vi. Butter or Margarine 1 Teaspoon.
vii. Ground Black pepper ¼ Teaspoon.
viii. Cooked Extra Long Grained Rice 1 Cups.
ix. Melted Butter ¼ Cups.
x. Finely Chopped Nut Meats ½ Cups.
Process:
At first you need to completely clean the Mushrooms using water and then dry it. Then, cook onion and butter just up to tender, but don’t let that to get brown. Without melted butter, add everything else. Fill up the mushroom cavity with rice. Put the mushroom caps on the broiler rack.

ii. Hot peeper Sauce 1 Teaspoon.
iii. Ground Coriander ½ Teaspoon.
iv. Salt ½ Teaspoon.
v. Snipped Fresh Parsley 1 tablespoon.
vi. Water 1/3 Cups.
vii. Shredded Carrots 1 Cups.
viii. Low Fat Cottage Cheese 1 Cup.
ix. Long Grain Rice 2/3 Cups.
x. Sliced Green Onions ½ Cups.
xi. Shredded Low Fat Cheddar Cheese ½ Cups.
xii. Plain Low Fat Yogurt 8 oz.

Process:
You need to put rice, water, salt, green onions, carrots, bottled hot pepper sauce, and bouillon granules inside a large saucepan. Start boiling, and keep the heat lower after getting boiled. Cover the saucepan for 15 minutes and let the water absorbed by the rice. Let the rice tender and stir it with yogurt, navy beans, parsley, and cottage cheese.
