After a big, satisfying meal, most of us crave for dessert. This is why if you’re hosting a barbecue or a party, you always have to prepare a sweet treat for your guests to enjoy after the main course. But many of us don’t have the time to bake a delicious dessert dish from scratch. No worries – you can make one using your grill!
Try these fuss-free dessert recipes the next time you host a barbecue:
Lime and Vanilla Grilled Pineapples
What you need:
- 1 whole pineapple, peeled, cored and sliced into eighths lengthwise
- 1 vanilla bean, split open and pulp scraped out
- 1 cup dark brown sugar
- 1/2 cup fresh lime juice
- Pinch of kosher salt
- 8 metal skewers
Mix together the vanilla bean (pod and pulp), dark brown sugar, lime juice and kosher salt in a saucepan. Bring to a boil over medium high heat, stirring constantly until sugar has dissolved. Remove from heat and allow to sit for 2 hours at room temperature. When ready, place in a sealable container and refrigerate until ready to use. Thread pineapple into skewers then brush evenly with prepared syrup. Cook on a pre-heated grill over high heat for 4 minutes per side or until tender. Serve with remaining lime and vanilla syrup.
Grilled Strawberry Shortcake
What you need:
- 16 strawberries, hulled
- 1 pound cake, sliced into 1/2-inch slices
- 1/2 lemon, zested
- 3/4 cup plus 3 tablespoons powdered sugar
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1/4 cup fresh lemon juice
- 1/4 teaspoon vanilla extract
- Metal skewers
To prepare the cream, whisk together lemon zest, 3 tablespoons powdered sugar, heavy cream and vanilla extract in a mixing bowl. Slowly add the sour cream and continue whisking until mixture has thickened. Transfer cream in a sealable container and chill in the refrigerator until ready to use. Combine remaining powdered sugar and lemon juice in a bowl. Thread the strawberries in metal skewers (4 in 1 skewer). Heat the cake slices on a pre-heated grill just until grill marks appear, about 1 to 2 minutes, followed by the strawberries (3 minutes). Remove grilled strawberries from skewers and slice each in half then coat with sugar and lemon glaze. To serve, spread cream on 1 cake slice, place 4 strawberry halves, add another layer of cream then top with another cake slice.
